Our ramen is produced under the direction of Chef Shinji Odawara, whose Daikanyama restaurant was awarded the 2026 Bib Gourmand by the Michelin Guide, ensuring refined quality and consistency in every bowl.

Chef Odawara trained at the prestigious Japanese restaurant Nadaman, building a strong foundation in traditional Japanese cuisine. He later moved to New York, where he led Japanese restaurants and gained international recognition in the fine dining world.
In 2022, he opened Issai Kassai in Daikanyama, Tokyo, a restaurant that blends classic Japanese traditions with refined global sensibilities. In 2026, the restaurant received a Bib Gourmand distinction from the Michelin Guide, recognizing its quality and value. Drawing on this experience, Chef Odawara brings Michelin-level standards into modern halal Japanese cuisine.
